Luscious Caramel Apple Muffin
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 1/2 cups peeled and finely chopped apples (about 2 medium apples)
- 1/2 cup caramel sauce (plus extra for drizzling)
- 1/4 cup chopped walnuts or pecans (optional)
Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
Mix the dry ingredients:
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
Combine the wet ingredients:
In a separate bowl, whisk together the eggs, melted butter, sour cream, and vanilla extract until smooth.
Add the apples:
Gently fold the chopped apples into the wet ingredients.
Combine wet and dry ingredients:
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
Add the caramel sauce:
Drizzle in the caramel sauce and gently fold it into the batter. The caramel will create beautiful streaks of flavor throughout the muffins.
Scoop and bake:
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If you like, sprinkle chopped walnuts or pecans on top for a little crunch.
Bake:
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs attached.
Cool and drizzle:
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Once cooled, drizzle with additional caramel sauce for extra sweetness and richness.
