5-Minute Lemon Cake
Ingredients:
2 lemons
2 eggs
150g sugar
4 tablespoons starch
300ml milk
6 eggs
A pinch of salt
7 tablespoons sugar
160g flour
120g butter
50ml milk
1 tsp powdered sugar
Coconut flakes
White chocolate
Instructions:
- Zest and juice the 2 lemons.
- In a mixing bowl, whisk together 2 eggs and 150g of sugar until well combined.
- Add the lemon zest and juice, starch, and 300ml of milk. Mix until smooth.
- Pour the mixture into a microwave-safe container.
- Microwave on high for 5 minutes or until the cake is set. Check by inserting a toothpick; it should come out clean.
- While the cake is cooling, prepare the topping. In a separate bowl, whisk together 6 eggs, a pinch of salt, and 7 tablespoons of sugar until fluffy.
- Gradually add 160g of flour and mix until smooth.
- In a pan, melt 120g of butter, then add 50ml of milk and 1 tsp of powdered sugar. Mix until well combined.
- Pour the butter mixture over the cake.
- Spread the egg-flour mixture on top.
- Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes, or until the top is golden brown.
- Once cooled, garnish with coconut flakes and white chocolate shavings.
