Chicken Stew recipe 

Ingredients:

For the stew:

1.5 pounds boneless, skinless chicken breasts or thighs,

cut into chunks

2 tablespoons olive oil

1 large onion, diced

3 carrots, sliced

2 celery stalks, chopped

2 cloves garlic, minced

4 cups chicken broth

1 can (14 oz) diced tomatoes, undrained

2 medium potatoes, peeled and diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon smoked paprika

Salt and pepper to taste

For garnish:

1/2 cup frozen peas

Fresh parsley, chopped

Instructions:

1. Sear the chicken:
Heat olive oil in a large pot over medium heat.

Season the chicken chunks with salt and pepper, then sear until golden brown on all sides. Remove and set aside.

2. Sauté the vegetables:
In the same pot, add more olive oil if needed, and sauté the onion, carrots, celery, and garlic until softened, about 5 minutes.

3. Build the stew:

Add the seared chicken back to the pot along with chicken broth, diced tomatoes, potatoes, thyme, rosemary, and smoked paprika.

Stir well and bring to a simmer.

4. Cook:
Cover and let the stew simmer on low heat for 25-30 minutes, stirring occasionally, until the potatoes are tender, and the chicken is fully cooked.

5. Final touches:

Stir in the frozen peas and cook for an additional 5 minutes.
