Ingredients

Regarding the chicken:

  1. Two big chicken breasts without bones or skin
  2. To taste, add salt and pepper.
  3. One cup of all-purpose flour
  4. Two huge eggs
  5. One tablespoon of water
  6. One cup of breadcrumbs, ideally with Italian seasoning
  7. Half a cup of Parmesan cheese, grated
  8. One teaspoon of optional garlic powder
  9. One teaspoon of optional dried oregano
  10. Half a teaspoon of optionally crushed red pepper flakes
  11. 1/4 cup of frying olive oil

Regarding the Assembly:

  • Two cups of marinara sauce (store-bought or homemade)
  • One and a half cups of mozzarella cheese, shredded
  • Leaves of fresh basil (for garnish)
  • Pasta that has been cooked (optional for serving)

Directions

Get the chicken ready:

  • Set the oven temperature to 400°F, or 200°C.
  • To get four thinner pieces, cut the chicken breasts in half horizontally. Add salt and pepper on both sides.

A Breading Station Setup:

  • Prepare your breading station with three shallow dishes:
  • Put the flour in the first dish.
  • Whisk the eggs and water together in the second dish.
  • Combine the breadcrumbs, crushed red pepper flakes, oregano, garlic powder, and grated Parmesan cheese in the third dish.

Make the chicken bread:

  • Shake off any extra flour after dredging each piece of chicken in it.
  • Allow any excess to drip off after dipping it into the egg mixture.
  • Lastly, lightly press the breadcrumb mixture onto it to ensure it sticks.

Cook the chicken:

  • Heat the olive oil in a big skillet over medium-high heat.
  • When the pan is hot, carefully add the breaded chicken pieces in batches, taking care not to pack it too full. Fry until cooked through and golden brown, about 3–4 minutes per side.
  • After taking the chicken out of the skillet, pat it dry using paper towels.

Put the Dish Together:

  • Cover the bottom of a baking dish with a thin coating of marinara sauce.

Top the sauce with the fried chicken.

  • Top each piece of chicken with shredded mozzarella cheese and more marinara sauce.

Bake:

  • Bake for 15 to 20 minutes in a preheated oven, or until the cheese is bubbling and melted.

Serve:

  • Take it out of the oven and give it some time to cool. Add some fresh basil leaves as a garnish. If desired, serve hot over cooked spaghetti.

Advice

  • Chicken: Before breading, marinade the chicken for a few hours in lemon juice or Italian dressing for added flavor.
  • Sauce: To save time, you can use your preferred canned marinara sauce or prepare your own.
  • Cheese: To get a diverse flavor profile, feel free to use different cheeses, such as provolone or fontina.
  • Any leftovers can be kept in the fridge for up to three days in an airtight container.
