Introduction:

This Air Fryer version of Baked Cottage Cheese Eggs is a quick, high-protein, low-carb breakfast that’s creamy, fluffy, and full of flavor. Cottage cheese gives the eggs a rich texture while boosting protein content, and the air fryer makes cooking hands-free and super efficient. It’s also great for portioning into ramekins or silicone muffin cups!

Ingredients (Serves 2–4):

4 large eggs

3/4 cup cottage cheese (full-fat or low-fat)

1/2 cup shredded cheese (cheddar, mozzarella, Swiss, etc.)

1/4 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder (optional)

1/4 cup chopped green onions or parsley (optional)

Cooking spray or oil (for greasing ramekins or cups)

Optional Add-ins:

Chopped spinach, mushrooms, bell peppers

Cooked bacon, ham, or sausage

Dash of chili flakes or smoked paprika for heat

Instructions:

 Prep the Air Fryer and Ramekins:

Preheat your air fryer to 325°F (160°C) for 3–5 minutes.

Lightly grease 3–4 ramekins (4 oz) or silicone muffin cups with spray oil or butter.

 Mix the Egg Base:

In a mixing bowl, whisk together the eggs and cottage cheese.

Stir in shredded cheese, salt, pepper, garlic powder, and any optional herbs or add-ins.

 Pour into Ramekins:

Divide the mixture evenly into the greased ramekins or silicone molds. Fill about 3/4 full to allow for rising.

 Air Fry:

Place ramekins carefully into the air fryer basket.

Air fry at 325°F (160°C) for 12–15 minutes, or until the eggs are set and lightly golden.

Check for doneness by inserting a toothpick or knife—it should come out clean.

Note: If using larger ramekins or baking all in one dish, cook for up to 18–20 minutes and cover the top loosely with foil for the first 10 minutes to prevent over-browning.

 Cool and Serve:

Let them cool for a few minutes to firm up. Serve warm, garnished with fresh herbs or avocado slices.
