Air Fryer Baked Eggplant Parmesan
Introduction
Eggplant Parmesan, or Melanzane alla Parmigiana, is a classic Italian comfort dish. In this air fryer version, the eggplant slices turn out crispy and golden without needing a drop of deep-fried oil. Layered with marinara sauce, mozzarella, and Parmesan, this dish is rich in flavor yet lighter on the waistline — ideal for a fuss-free, feel-good dinner.

Ingredients:
For the Eggplant:
1 large eggplant (or 2 small), sliced into 1/4-inch rounds
1 tsp salt (for sweating the eggplant)
1 cup breadcrumbs (Panko or Italian-style)
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
2 eggs
1/4 cup milk
1/2 cup all-purpose flour (for dredging)
For Assembly:
1 to 1 1/2 cups marinara sauce
1 to 1 1/2 cups shredded mozzarella cheese
Extra Parmesan for topping
Fresh basil or parsley (for garnish)
Instructions:
Prep the Eggplant
Slice eggplant into 1/4-inch thick rounds.
Lay slices on paper towels and sprinkle both sides with salt.
Let sit for 15–20 minutes to draw out moisture and bitterness.
Pat dry with clean paper towels.
Set Up Breading Station
Bowl 1: Flour
Bowl 2: Beaten eggs + milk
Bowl 3: Breadcrumbs + Parmesan + Italian seasoning
Dredge each eggplant slice in flour, then egg mixture, then breadcrumb mixture.
Air Fry the Eggplant Slices
Preheat air fryer to 375°F (190°C) for 3 minutes.
Lightly spray both sides of eggplant with oil spray.
Place in a single layer in the air fryer basket (work in batches).
Air fry for 10–12 minutes, flipping halfway through, until golden and crispy.
Assemble the Eggplant Parmesan
In a small air fryer-safe baking dish or pan:
Spread a spoonful of marinara sauce at the bottom.
Layer crispy eggplant slices.
Add a spoonful of sauce over each slice.
Sprinkle with mozzarella and a bit of Parmesan.
Repeat layers as desired (2 layers usually fit well).
Final Air Fry (Bake)
Return assembled dish to air fryer at 350°F (175°C).
Cook for 6–8 minutes, or until cheese is melted and bubbly.
Optional: Broil mode or increase to 390°F for 1–2 minutes for extra browning.
Cool & Garnish
Let rest for 5 minutes.
Garnish with fresh basil or parsley and serve warm.
