Ingredients

  • Pasta:
    • ¾ – 1 lb thin spaghetti, angel hair pasta, or gluten-free pasta
  • Shrimp:
    • 1½ lbs medium shrimp, peeled and deveined
    • 1 tablespoon coconut oil (for brushing)
    • 3 cloves garlic, minced
    • 3 teaspoons paprika
    • 1 tablespoon dried parsley
    • Freshly ground black pepper, to taste
  • Sauce:
    • ½ cup mayonnaise or light mayonnaise
    • ½ cup Thai sweet chili sauce
    • 2 cloves garlic, minced
    • 2 tablespoons lime juice
    • ⅛ teaspoon crushed red pepper flakesInstructions
      • Prepare the Sauce:
        • In a small bowl, mix together the mayonnaise, Thai sweet chili sauce, minced garlic, lime juice, and crushed red pepper flakes. Set the sauce aside.
      • Cook the Pasta:
        • In a large pot of boiling water, cook the pasta according to the package instructions until al dente. Drain the pasta well and set it aside.
      • Season the Shrimp:
        • In a medium-sized bowl, combine the peeled and deveined shrimp with minced garlic, paprika, and freshly ground black pepper. Toss the shrimp to ensure they are evenly coated with the seasoning.
      • Air Fry the Shrimp:
        • Preheat the air fryer to 400°F (200°C) for 3 minutes.
        • Lightly brush the shrimp with coconut oil or spray them with cooking spray. Place the shrimp in a single layer in the air fryer basket.
        • Air fry the shrimp for 6-8 minutes, shaking the basket halfway through, until the shrimp are pink and cooked through.
      • Combine and Serve:
        • In a large serving bowl, combine the cooked pasta, air-fried shrimp, and the prepared sauce. Toss everything together until the pasta and shrimp are evenly coated with the sauce.
        • Garnish with dried parsley and serve immediately.
