Ingredients
For the Steaks:

1 egg
¼ cup breadcrumbs
1 tablespoon ketchup
1 tablespoon Dijon mustard

2 teaspoons garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
Kosher salt and black pepper, to taste
1 tablespoon chopped parsley (optional)
For the Gravy:
1 tablespoon butter
1 small onion, thinly sliced
1 cup sliced mushrooms (cremini or button)
1 tablespoon all-purpose flour
1 cup beef broth
1 teaspoon Worcestershire sauce
½ teaspoon soy sauce (Bobby-style umami boost)
Salt & pepper to taste
Instructions
Prep the Steak Mixture (0:45–2:00)
In a large bowl, combine all steak ingredients.
Mix gently until just combined — do not overmix.
Shape into 4 oval patties, about ¾ inch thick.
Air Fry the Patties (2:00–5:00)
Preheat air fryer to 370°F (188°C) for 3 minutes.
Spray basket with cooking spray.
Place patties in basket in a single layer (work in batches if needed).
Air fry 10 minutes, flip, then cook another 7–10 minutes until internal temp reaches 160°F (71°C).
Timing Note: Total 17–20 minutes depending on thickness.
Make the Gravy (5:00–8:00)
(While the patties cook, prepare gravy on stovetop)
In a skillet over medium heat, melt butter.
Add onions and mushrooms. Sauté for 6–8 minutes until caramelized.
Stir in flour, cook 1 minute.
Slowly whisk in beef broth, Worcestershire, and soy sauce.
Simmer 3–5 minutes until thickened. Season with salt & pepper.
Optional: Add a splash of heavy cream or a pat of butter at the end for extra richness (very Bobby).
Combine & Serve (8:00–9:00)
