  2. Mash or Grate the Cauliflower: Use a potato masher, fork, or a food processor to mash or finely grate the cauliflower. You want it to resemble coarse crumbs or rice grains. Place the mashed cauliflower in a clean kitchen towel and squeeze out any excess moisture.
  3. Combine Ingredients: In a mixing bowl, combine the mashed cauliflower, eggs, breadcrumbs (or flour), grated Parmesan cheese, minced garlic, fresh herbs, salt, and black pepper. Mix everything thoroughly until a thick batter forms. If the mixture is too wet, add more breadcrumbs or flour as needed.
  4. Shape the Fritters: Divide the mixture into equal portions and shape them into patties or fritters using your hands. Make sure they are compact and hold together well.
  5. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for a few minutes.
  6. Lightly Coat with Olive Oil: Brush or spray the fritters with a thin layer of olive oil. This helps achieve a crispy exterior.
  7. Air Fry: Place the fritters in a single layer in the air fryer basket, leaving some space between each. Depending on the size of your air fryer, you may need to cook them in batches. Air fry the fritters at 375°F (190°C) for about 10-12 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy.
  8. Serve: Once the cauliflower fritters are done, remove them from the air fryer, and let them cool for a minute or two. Serve them hot with your favorite dipping sauce or enjoy them on their own.
