 Ingredients

2 cups cold mashed potatoes (leftover or freshly made & cooled)

1 cup shredded cheddar cheese (or mozzarella, or a blend)

2 tbsp grated Parmesan cheese

2 tbsp chopped green onions (optional)

1 large egg

1/3 cup all-purpose flour or breadcrumbs

Salt & pepper to taste

Cooking spray or olive oil spray

Optional Add-ins:

1/4 tsp garlic powder

1/4 tsp smoked paprika

Crumbled chicken for extra flavor

 Instructions

Mix the Puffs:

In a large bowl, mix together:

Mashed potatoes

Cheddar cheese

Parmesan

Green onions

Egg

Flour (or breadcrumbs)

Salt, pepper, and any optional seasonings

Mix until well combined. The mixture should be firm enough to shape — if it’s too loose, add a little more flour or breadcrumbs.
