Ingredients

For the Filling:

1 tbsp oil

200g (7 oz) ground beef

2 medium potatoes, peeled and diced small

1/2 tsp salt

1/2 tsp paprika

1/2 tsp cumin

1/4 tsp chili flakes (optional)

1/4 tsp black pepper

1/2 tsp garlic powder or 2 cloves garlic, minced

1/2 small onion, finely chopped

1/2 cup shredded cheddar or mozzarella (or combo)

2 tbsp chopped cilantro (optional)

For Wrapping:

4 large flour tortillas (10-inch size)

Extra cheese for topping (optional)

Cooking spray or oil for brushing

Instructions:

Cook the Potatoes & Beef (10 minutes)

Heat 1 tbsp oil in a skillet over medium heat.

Add chopped onion and cook until soft (2–3 minutes).

Add ground beef and cook until browned. Drain any excess fat.

Add diced potatoes, salt, pepper, paprika, cumin, garlic, and chili flakes.

Stir and cook until potatoes are tender (add a splash of water if needed), about 6–8 minutes.

Stir in cheese and chopped cilantro (if using). Remove from heat and let it cool slightly.

Assemble the Burritos (5 minutes)

Warm tortillas slightly to make them flexible.

Spoon the filling in the center of each tortilla.

Add extra shredded cheese if you like.
