Air Fryer Cheesy Potatoes Foil Packet

Ingredients

  • 2 large Russet potatoes
  • 2 tablespoons olive oil
  • 1/4 cup sharp cheddar cheeseshredded
  • 1/4 cup mozzarella cheeseshredded
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Instructions

    1. Start by scrubbing your potatoes, dry them with a paper towel.
    2. Using a sharp knife, cut your potato into slices about 1/4 inch thick.
    3. In a large mixing bowl, mix the sliced potatoes, olive oil, salt, and pepper.
    4. Lay your foil out, cutting 4 pieces large enough to fold your potatoes around them.
    5. Add about 1/4 of the potatoes to each pack, making four foil packs.
    6. Close the foil packs closed by folding up the sides and pinching the edges to seal.
    7. Set into the potato packages air fryer for 10 to 15 minutes at 350 degrees F, air fryer setting.
    8. I checked my potatoes at around 12 minutes, and they were done, so I removed them from the air fryer and, topped them with shredded cheese, and returned to the air fryer for a couple of minutes until the cheese melted.
