Toppings:
Hamburger buns or brioche bun, lettuce, sliced tomatoes, and pickles for serving
- Start by trimming the fat off the chicken sandwiches and then slice the breasts in half. 
- In a large bowl, mix the buttermilk and pickle juice. 
- Place the chicken in the buttermilk/pickle mixture. Cover and refrigerate for about 2 hours. 
- After marinating the chicken, in another bowl, mix the egg and milk. 
- In another bowl, add the flour, powdered sugar, and spices. 
- Dip your chicken into the egg/milk and then into the flour mixture. 
- As you coat your chicken, place them into the air fryer basket. Spray generously with either olive oil or peanut oil. You can also use a parchment liner or reusable silicone liner. 
- Set the temperature to 350 degrees F for 5 minutes. Then increase the temperature to 400 degrees for another 4 to 8 minutes. Check the internal temperature of the chicken, which should be 165 degrees F, with a meat thermometer. 
- Add the cooked chicken to a brioche or hamburger roll, and add your toppings. 
- Plate, serve, and enjoy!
