Ingredients
10 flour tortillas
16 ounces sour cream
10.5 ounces cream of chicken soup
4 ounces canned diced green chiles
5 cups cooked chicken, shredded
2 cups shredded Monterey Jack cheese
1 cup shredded cheddar cheese
Instructions
Prepare the Sauce: In a bowl, mix the sour cream, cream of chicken soup, and diced green chiles until well combined.
Assemble the Enchiladas: Place ½ cup of shredded chicken and 2 tablespoons of the prepared sauce in each tortilla. Sprinkle with Monterey Jack cheese. Roll up each tortilla tightly and place them seam-side down in the air fryer basket. Depending on the size of your air fryer, you may need to cook them in batches.
Cook the Enchiladas: Air fry at 360°F (182°C) for 8-10 minutes, or until the tortillas are crispy and golden. You might need to flip them halfway through cooking for even browning.
