Ingredients
For the Chipotle Ranch Chicken:
2 boneless, skinless chicken breasts (or thighs), diced or sliced
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp chili powder
Salt & black pepper to taste
2 tbsp chipotle ranch dressing (store-bought or homemade, see below)
Chipotle Ranch Dressing (Quick Homemade):
1/4 cup ranch dressing
1 chipotle pepper in adobo sauce (minced)
1 tsp lime juice
Optional: dash of garlic powder
Burrito Fillings:
2–3 large flour tortillas (10-inch)
1 cup cooked rice (white, brown, or cilantro-lime)
1/2 cup canned black beans, rinsed and drained
1/2 cup corn (fresh, frozen, or canned)
1/2 cup shredded cheddar or Monterey Jack cheese
1/4 cup chopped red onion or scallions
1/2 avocado, sliced (optional)
Extra chipotle ranch for drizzling
Instructions
Cook the Chicken
In a bowl, combine diced chicken, olive oil, paprika, cumin, chili powder, salt, and pepper.
Air fry at 375°F (190°C) for 10–12 minutes, shaking halfway through.
Toss the hot chicken with 2 tbsp chipotle ranch dressing. Set aside.
Warm the Tortillas
Microwave tortillas for 20–30 seconds to soften for easier rolling.
Assemble the Burritos
On each tortilla:
Spread a spoonful of rice.
Add chipotle ranch chicken.
Top with black beans, corn, cheese, onions, avocado (if using), and a drizzle of chipotle ranch.
Fold sides in, then roll tightly from bottom to top into a burrito.
Crisp in the Air Fryer
Lightly brush or spray burritos with oil or butter.
Place seam-side down in the air fryer basket.
Air fry at 380°F (193°C) for 6–8 minutes, flipping halfway, until golden and crisp.
