Air Fryer Classic Potato Pancakes

Air Fryer Classic Potato Pancakes (Crispy & Golden!)

Table of Contents

Introduction:

Classic potato pancakes (latkes or drinkie) are a delicious, crispy-on-the-outside, tender-on-the-inside dish made from grated potatoes, onion, and simple seasonings. Traditionally pan-fried, these pancakes can be made healthier and with less oil in the air fryer while still achieving that irresistible crunch. Perfect for breakfast, as a side dish, or even a snack, these air-fried potato pancakes are quick and easy to prepare.

Ingredients:

Potatoes – 2 large (Russet or Yukon Gold, about 1 pound)

Onion – ½ small, finely grated

Egg – 1 large

Flour – 2 tablespoons (or substitute with breadcrumbs for extra crispiness)

Garlic Powder – ½ teaspoon (optional, for extra flavor)

Salt – ½ teaspoon

Black Pepper – ¼ teaspoon

Baking Powder – ½ teaspoon (for a lighter texture)

Olive Oil Spray – For crisping in the air fryer

Instructions:

 Prepare the Potatoes

Grate the potatoes using a box grater or food processor.

Place grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This helps the pancakes get crispy.

Transfer to a bowl and mix in the grated onion.

 Mix the Batter

Add the egg, flour, garlic powder, salt, pepper, and baking powder to the grated potatoes and onion. Mix well until combined.

 Shape the Pancakes

Scoop about 2 tablespoons of the mixture and shape it into a flat, round patty (about ½ inch thick).

Repeat with the remaining mixture and place them on a plate or parchment paper.

 Air Fry the Potato Pancakes

Preheat the air fryer to 380°F (190°C) for 3 minutes.

Lightly spray the air fryer basket with olive oil to prevent sticking.

Arrange the potato pancakes in a single layer (do not overcrowd).

Air fry at 380°F (190°C) for 12-15 minutes, flipping halfway through, until golden brown and crispy.

Repeat in batches if needed.

 Serve & Enjoy!

Serve warm with sour cream, Greek yogurt, applesauce, or fresh herbs for a delicious finish.

Tips & Tricks

Squeeze out excess water – Dry potatoes result in crispier pancakes.

Use starchy potatoes – Russet or Yukon Gold potatoes work best.

Preheat your air fryer – Ensures even cooking and better crisping.

Don’t overcrowd the basket – Cook in batches if necessary for maximum crispiness.

Flip halfway through – This ensures both sides get crispy.

For extra crunch, brush or spray lightly with olive oil before air frying.
