Air Fryer Copycat Starbucks Iced Lemon Loaf

Description

This is a great and easy recipe. I made the entire loaf in my air fryer; depending on the size of your air fryer,  you can either make 3 mini loaves or 1 regular size loaf.   This is a nod to the Starbucks Famous Lemon Loaf Cake

Ingredients

Lemon Loaf:

  1. 1/2 cup butterunsalted, room temperature
  2. 1 cup granulated sugar
  3. 2 large eggs
  4. 1 teaspoon lemon zest
  5. 1 teaspoon vanilla extract
  6. 1 3/4 cups all-purpose flour
  7. 1 teaspoon kosher salt(omit if using salted butter)
  8. 1/4 teaspoon baking soda
  9. 1/2 cup sour creamor Greek Yogurt

Lemon Glaze:

  1. 1 cup powdered sugar
  2. 1 teaspoon lemon zest
  3. 1-2 tablespoons lemon juice

Instructions

  1. In a large mixing bowl, cream the butter and sugar together.
  2. Then mix in the eggs, lemon zest, vanilla extract, flour, salt (if using), baking soda, and sour cream.
  3. Mix well.
  4. Then pour the prepared batter into an air fryer safe pan,  which has been sprayed with non-stick cooking spray (you can also use olive oil spray)
  5. Set in your air fryer oven or basket and set the temperature for 330 degrees F, air fryer setting, for 15-20 minutes,
  6. Let the bread cool, and then in a small bowl, mix the powdered sugar, lemon zest, and lemon juice.
  7. Spread the icing over the top.
  8. Plate, serve and enjoy!
