Ingredients

  • 1 large savoy cabbage
  • 2 pounds lean ground beef
  • 2 medium to large onions, finely chopped
  • 2 tablespoons canola oil, olive oil, or butter
  • 1 cup white or brown rice
  • 2 cups water
  • 3 eggs
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2 cans tomato soup
  • 2 small bottles (individual serving sizes) tomato juice or vegetable cocktail like V8
  • 1 can or small carton chicken broth
  • Instructions
    • Prepare the Cabbage:
      • Place the savoy cabbage in the freezer for 12 hours or overnight. This makes the leaves soft and easy to use without boiling.
      • Thaw the cabbage at room temperature. Once thawed, remove the leaves, cutting away the tough part closest to the core.
    • Cook the Rice:
      • In a small saucepan or microwave-safe dish, cook the rice with 2 cups of water. Once cooked, set it aside to cool. The rice can be made a day ahead and chilled in the refrigerator.
    • Sauté the Onions:
      • In a skillet, heat the oil or butter over medium heat. Add the finely chopped onions and sauté until golden brown. Set aside to cool.
    • Prepare the Meat Mixture:
      • In a large bowl, combine the ground beef, sautéed onions, cooked rice, eggs, salt, and pepper. Mix until well combined using your hands.
    • Assemble the Cabbage Rolls:
      • Take a cabbage leaf and place about 1/3 to 1/2 cup of the meat mixture at the bottom of the leaf. Roll up the leaf, tucking in the sides to secure the filling. Repeat until all the meat is used.
    • Preheat the Air Fryer:
      • Preheat your air fryer to 320°F (160°C) for 3 minutes.
    • Cook the Cabbage Rolls:
      • Spray your air fryer basket or tray with cooking spray. Place the cabbage rolls seam-side down in the basket, making sure they are not overcrowded. You may need to cook in batches.
      • Air fry the cabbage rolls at 320°F (160°C) for 15-20 minutes, turning them halfway through to ensure even cooking.
    • Prepare the Tomato Sauce:
      • In a large mixing bowl, combine the tomato soup, tomato juice, and chicken broth. Once the cabbage rolls are done air frying, pour the sauce evenly over them.
    • Final Air Fry:
      • Return the cabbage rolls with the sauce to the air fryer and cook at 320°F (160°C) for an additional 10 minutes, allowing the sauce to thicken and flavors to meld.
    • Serve:
      • Serve the cabbage rolls hot, with the rich tomato sauce poured over them. You can refrigerate or freeze any leftovers and reheat as needed.
