Ingredients
- 2 cups rolled oats
- 1/2 cup raw nuts, almonds, walnuts, or pecans, chopped
- 1/4 cup seeds, pumpkin or sunflower seeds
- 1/3 cup honey , or maple syrup
- 1/4 cup coconut oil , or mild olive oil
- 1/2 teaspoon cinnamon , or nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup cranberries, dried
Instructions
- Preheat the Air Fryer: Set your air fryer to 300°F (150°C). If your air fryer requires preheating, let it warm up while you mix the ingredients.
- Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, seeds, cinnamon, and salt.
- Add Wet Ingredients: In a separate bowl, mix together the honey or maple syrup, oil, and vanilla extract. Pour this over the oat mixture and stir until everything is well coated.
- Prepare for Air Frying: If your air fryer has a mesh basket, you might want to line it with parchment paper to prevent small bits from falling through. Ensure the paper doesn’t cover the edges of the basket for proper air circulation.
- Cook the Granola: Spread the granola mixture evenly in the air fryer basket. Air fry for about 15-20 minutes, stirring every 5 minutes to ensure even cooking and to prevent burning.
- Add Cranberries: Once the granola is golden and crisp, carefully remove it from the air fryer and let it cool slightly. Then, stir in the dried cranberries.
- Cool Completely: Allow the granola to cool completely. It will crisp up further as it cools.
- Storage: Store your air fryer cranberry granola in an airtight container at room temperature. It should stay fresh for several weeks.
