Air Fryer Crustless Coconut Pie
Here is a recipe for a Crustless Coconut Pie, which is a miraculous dessert that transforms into its own crust as it bakes. This recipe is both easy to make and delicious.
Prep Time: 10 minutes
Air Fry Time: 25–30 minutes
Cooling Time: 15–20 minutes
Total: ~1 hour
Ingredients (One 6–7 inch pie – serves 4–6):
1/2 cup all-purpose flour
1 cup shredded sweetened coconut
1/2 cup sugar
2 large eggs
1 cup milk (whole or 2%)
1/4 cup unsalted butter, melted
1 tsp vanilla extract
Pinch of salt
Optional: 1/4 tsp nutmeg or cinnamon for added flavor
Instructions:
Prepare the Batter (5–7 minutes)
In a large bowl, whisk together eggs and sugar until light and slightly foamy.
Add melted butter, milk, and vanilla extract; mix well.
Stir in flour, salt, and shredded coconut (plus spices if using).
Mix until fully combined into a pourable batter.
Preheat Air Fryer (3 minutes)
Preheat your air fryer to 320°F (160°C) for 3 minutes.
Pour & Air Fry (25–30 minutes)
Grease a 6–7 inch round baking dish or cake pan that fits your air fryer basket.
Pour the batter into the dish.
Carefully place the dish into the air fryer basket.
Air fry at 320°F (160°C) for 25–30 minutes or until golden brown and a toothpick inserted comes out clean.
Check at the 20-minute mark and tent with foil if the top is browning too fast.
Cool & Serve (15–20 minutes)
Let the pie cool in the dish for 15–20 minutes. It will firm up as it cools.
Slice and serve warm or chilled — great with whipped cream or a scoop of vanilla ice cream.
Tips:
Want extra coconut flavor? Add 1/4 tsp coconut extract.
For a gluten-free version, use almond flour or gluten-free baking mix.
Store leftovers in the fridge for up to 4 days. Reheat gently in the air fryer or microwave.
