Air Fryer Egg Roll in a Bowl

Ingredients

  • 1 pound ground meatground turkey, ground chicken, or lean ground beef or pork
  • 16 ounces coleslaw mixture
  • 1/4 cup coconut aminos
  • 1 tablespoon fresh ginger
  • 1 tablespoon fresh garlic
  • 2 large eggsoptional
  • 2 teaspoons srirachato taste

For Topping:

  • 1 tablespoon Magnifisauceor any other thousand island-like sauce
  • 2 tablespoons green onions
  • 1 teaspoon sesame seeds
  • Instructions

    1. Brown the meat with a little sesame oil in the air fryer (use a baking pan and cook for 8-10 minutes at 350 degrees F, until fully browned & cooked through)
    2. Then fold in ginger + minced garlic and cook until fragrant, in the last 2 minutes. Fold in coleslaw mixture, amino, and cook for 3-4 minutes. Add a little more aminos or water if mixture isn’t well-coated
    3. Make a well in the center, add in egg/s, and scramble. Cook for 2-3 more minutes. Then mix in Sriracha.
    4. Top with sauce, green onions & sesame seeds
    5. Serve by itself or over rice/ cauliflower rice
