Ingredients:
For the Filling:
2 cups peeled and diced apples or peaches (fresh or canned, drained)
2 tbsp unsalted butter
¼ cup brown sugar
1 tsp cinnamon
½ tsp nutmeg (optional)
1 tbsp cornstarch
2 tbsp water
½ tsp vanilla extract
For the Dough:
1 package refrigerated pie crusts (or use homemade)
1 egg (for egg wash)
1 tbsp water
Optional Topping:
Powdered sugar or a glaze made with:
½ cup powdered sugar
1–2 tsp milk
¼ tsp vanilla extract
Instructions:
Prepare the Filling:
In a skillet, melt butter over medium heat.
Add diced apples/peaches, brown sugar, cinnamon, and nutmeg. Stir and cook 5–7 minutes until fruit softens.
Mix cornstarch and water in a small bowl, then stir into fruit mixture. Cook until thickened (1–2 min).
Remove from heat and stir in vanilla. Let it cool completely.
Assemble the Pies:
Roll out pie crust and cut into 4–5 inch circles (use a large biscuit cutter or bowl).
Place 1–2 tbsp of cooled filling in the center of each circle.
Fold over to make a half-moon shape, press edges with a fork to seal.
Whisk egg and 1 tbsp water; brush over each pie.
Air Fry:
