Ingredients

  • 32 ounces frozen hashbrownsthawed
  • 1 stick unsalted butter
  • 1 teaspoon minced garlic
  • 1/2 cup diced onions
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • 8 ounces shredded cheddar cheese

Topping:

  • 2 cup crushed plain potato chips
  • 1 tablespoon unsalted butter, melted
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large skillet, over medium-high heat, add your onions, garlic and cook until soft and translucent, about 4 to 5 minutes. Once your onions are translucent, mix in the flour, milk, and broth. Simmer until the mixture is thickened, about 4 to 6 minutes.
  2. Remove the mixture from the heat, and then stir in the sour cream and shredded cheddar cheese, fold in the thawed hashbrowns.
  3. Spray your baking pan with cooking spray, and then pour in your hashbrowns. Set the pan into the air fryer, and set the temperature to 320 degrees F, air fryer setting, for 10 to 12 minutes, or until it’s golden brown.
  4. While your potatoes are cooking in a small bowl, add the crushed potato chips, melted butter, and Parmesan cheese, mix well. Add the topping on top, and cook until golden brown.
  5. Plate, serve, and enjoy!
