Air Fryer Golden Potato Croquettes

Ingredients
1/4 cup yeast
2 cups boiled potatoes, mashed
1flax egg
1 tablespoon all-purpose flour
2 tablespoons chopped chives
salt and freshly ground black pepper, to taste
2 tablespoons vegetable oil
1/4 cup breadcrumbs
Method
Step 1
In a medium mixing bowl, combine yeast, mashed potatoes, flax egg, flour, and chives. Mix well, then sprinkle with salt and black pepper.
Step 2
In a separate bowl, combine the vegetable oil, and breadcrumbs. Mix to achieve a crumbly consistency.
Step 3
Form from the potato mixture small balls. Dip each one into the breadcrumb mixture.
Step 4
Preheat your air fryer to 400 F (200 C) for 5 minutes.

Put the croquettes in a single layer in the air fryer basket. Fry at 400 F (200 C) for 15 minutes, or until they are golden brown.
