Table of Contents

Introduction

Hot Cross Buns are a classic spiced sweet bun traditionally eaten during Easter, marked with a cross on top. Making them in the air fryer results in perfectly golden, fluffy buns with a soft interior and a slightly crisp crust. This air fryer method cuts down baking time while keeping the buns light and airy.

Ingredients

For the Dough:

2 ¼ teaspoons (1 packet) instant yeast

½ cup warm milk (110°F/43°C)

¼ cup granulated sugar

3 cups all-purpose flour (plus extra for dusting)

1 teaspoon cinnamon

½ teaspoon nutmeg

¼ teaspoon salt

1 egg

3 tablespoons butter, melted

½ cup raisins or currants

1 teaspoon vanilla extract

Zest of 1 orange (optional, for extra flavor)

For the Cross:

¼ cup all-purpose flour

3 tablespoons water (adjust as needed for a thick paste)

For the Glaze:

2 tablespoons apricot jam or honey

1 tablespoon water

Instructions

 Prepare the Dough

In a bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until frothy.

In a large mixing bowl, combine flour, cinnamon, nutmeg, and salt.

Add egg, melted butter, vanilla, and orange zest to the yeast mixture. Stir to combine.

Gradually mix in the dry ingredients. Stir in the raisins or currants.

Knead the dough for about 8–10 minutes (or use a stand mixer for 5 minutes) until soft and elastic.

Cover and let rise in a warm place for 1–1.5 hours, or until doubled in size.

 Shape the Buns

Punch down the dough and divide it into 8 equal pieces.

Roll each piece into a smooth ball.

Arrange the buns in a parchment-lined air fryer basket, leaving slight gaps for expansion.

Cover and let rise for 30 minutes.

 Make the Cross Paste

Mix flour and water until smooth.

Transfer to a piping bag (or a small zip-top bag with the corner snipped).

Pipe crosses over the buns.

 Air Fry the Buns

Preheat the air fryer to 320°F (160°C).

Air fry for 10–12 minutes until golden brown.

If needed, check after 8 minutes and adjust based on browning.

Glaze the Buns

Heat apricot jam and water for 30 seconds in the microwave.

Brush over warm buns for a shiny, sticky finish.
