Air Fryer Lemon Cake
You may bake using the Air Fryer. This Air Fryer Lemon Cake bakes in less than half an hour and is sweet, moist, and lemony.
Ingredients
- 120g flour (4¼ oz)
- 75 g of soft butter (2½ oz)
- 75 g margarine (2 ½ oz)
- 2 eggs
- 75 g fine granulated sugar (2½ oz).
- 2 teaspoons of lemon juice.
- 1½ tsp baking powder.
- 1 teaspoon of vanilla extract.
- Pinch of salt.
Instructions
- Preheat the air fryer at 320℉/160℃ for 5 minutes.
- In a mixing bowl, combine butter, margarine, vanilla extract, and sugar. Beat with a mixer or whisk until light and creamy, about 5 minutes. Be careful not to overmix.
- Add the eggs and mix them into the butter one at a time. When the first egg is well integrated into the mixture, add the second.
- Then, combine the flour, baking powder, lemon juice, and a pinch of salt. Mix thoroughly.
- Use some soft butter to coat the cake pan. Cut a circle from parchment paper and place it in the cake pan so that the cake does not stick to it.
- Pour the batter into the cake pan and smooth with a spatula.
- Place the cake pan in the fryer basket and slide it into the Air Fryer. Set the timer for 20-25 minutes and bake the cake until done and browned.
- Insert a bamboo skewer or toothpick into the center of the cake. It’s finished when it comes out clean.
- Allow the cake to cool in the pan for at least 5 minutes. Then move the cake pan over to a wire rack to cool.
