Air Fryer Mexican Pizza
Mexican Pizza is a fun, flavorful mashup of tacos and pizza — and making it in the air fryer gives it that crispy, golden finish without turning on the oven! Inspired by the beloved fast-food version, this homemade version is healthier, tastier, and super easy to customize with your favorite toppings. Plus, it’s ready in under 20 minutes!

Ingredients (For 2 Mexican Pizzas)
Base:
4 small flour tortillas (6–7 inches)
Beef Filling:
½ pound ground beef
1 tablespoon taco seasoning
2 tablespoons water
Other Layers:
½ cup refried beans (canned or homemade)
½ cup shredded Mexican cheese blend (or cheddar + Monterey Jack)
¼ cup enchilada sauce or taco sauce
1 tablespoon olive oil or cooking spray (for crisping tortillas)
Toppings (optional but recommended):
Diced tomatoes
Sliced black olives
Sliced green onions
Sour cream or guacamole
Pickled jalapeños
Fresh cilantro
Instructions
Cook the Beef:
In a skillet over medium heat, cook ground beef until browned.
Add taco seasoning and 2 tbsp water. Simmer for 2–3 minutes until thickened.
Remove from heat and set aside.
Crisp the Tortillas:
Lightly brush or spray tortillas with oil.
Place one or two tortillas in the air fryer basket (depending on size and capacity).
Air fry at 370°F (188°C) for 2–3 minutes per side until lightly golden and crisp.
Repeat with remaining tortillas.
Assemble the Pizzas:
On one tortilla, spread a thin layer of refried beans.
Top with seasoned ground beef (about 2–3 tablespoons).
Place another tortilla on top to make a sandwich.
Spoon over some enchilada or taco sauce.
Sprinkle with shredded cheese.
Air Fry the Mexican Pizza:
Carefully place the assembled pizza back into the air fryer basket.
Air fry at 360°F (182°C) for 4–5 minutes or until cheese is melted and bubbly.
Add Toppings:
Remove from the air fryer. Let cool for 2–3 minutes.
Add toppings like tomatoes, olives, green onions, jalapeños, and a dollop of sour cream or guacamole.
