Air Fryer Mini Apple Cakes

Ingredients

Apple Layer

  1. 4 tablespoons buttermelted
  2.  cup light brown sugar
  3. 2 small granny smith applessliced

Cake Layer

  1. 6 tablespoons buttersoftened
  2. ¾ cup light brown sugar
  3. 2 large eggs
  4. 1 teaspoon pure vanilla extract
  5. 1 ¼ cups all-purpose flour
  6. 1 teaspoon baking powder
  7. 1 teaspoon ground cinnamon
  8. ¼ teaspoon ground nutmeg
  9.  teaspoon kosher salt
  10. ¼ cup whole milk

Icing/Glaze:

  1. 1 cup powdered sugar
  2. 2 to 3 tablespoons milk

Instructions

  1. Spray your muffin tins with non-stick cooking spray. In a small bowl, whisk together the melted butter and brown sugar until well combined and smooth.
  2. Add one tablespoon of the butter/brown sugar mixture to the bottom of the muffin tin. Add your diced apples to the remaining mixture, and set aside.
  3. Then in another bowl or stand mixer, add the butter and brown sugar, and mix until light and fluffy. Fold in the eggs and vanilla extract, scraping the bowls as it is mixing. Mix the flour, baking powder, ground cinnamon, nutmeg, and salt in a small bowl. Slowly fold in the butter mixture, pour in the mix, and mix until the dough is thoroughly combined.
  4. Divide the cake batter between the muffin tin, making sure to pour it over the apples, so they do not move. Set the muffin tin into the air fryer basket and set the temperature to 320 degrees F, air fryer setting, bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove the cakes from the air fryer, and let them cool for a few minutes before removing them from the muffin tins.
  6. Drizzle with the icing right before serving.
  7. Plate, serve and enjoy!
