AIR FRYER MIXED BERRY MUFFINS

Ingredients:

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
1/3 cup vegetable oil
1 large egg
1/2 cup milk
1 tsp vanilla extract
1 cup mixed berries (blueberries, raspberries, strawberries, etc.)
Cooking spray or muffin liners
INSTRUCTIONS:
Prepare the Muffin Batter:In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, whisk together the vegetable oil, egg, milk, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
Gently fold in the mixed berries.
Prepare the Air Fryer:Preheat your air fryer to 350°F (175°C) for about 3-5 minutes.
Lightly spray silicone muffin cups with cooking spray or use paper muffin liners.
Fill the Muffin Cups:Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Air Fry the Muffins:Place the muffin cups in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
Air fry for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
If the tops start to brown too quickly, you can cover them loosely with aluminum foil.
Cool and Serve:Once done, remove the muffins from the air fryer and let them cool in the muffin cups for a few minutes.
Transfer the muffins to a wire rack to cool completely.
