- Stainless steel pot
- Colander
- Air fryer
- Kitchen tongs
Ingredients
- 2 lbs potatoes (Russet, Irish, Idaho Maris Piper would work)
- 2 teaspoons Salt divided
- 1 teaspoon dried Parsley
- 1 teaspoon dried Oregano
- ½ teaspoon Rosemary
- 1 teaspoon garlic powder
- 2 Tablespoons oil
Instructions
Prepare potatoes Wash and scrub potatoes then cut into cubes.
Parboil
- Transfer potatoes into pot, add water and 1 teaspoon of salt and bring to boil for 5 to 7 mins
- Drain the parboiled potatoes.
Air fryer instructions
- Transfer drained potatoes into a bowl, add the oil, remaining salt and herbs then toss to coat the potatoes.
- Transfer coated potatoes to air fryer basket and roast at 400°F / 200°C for 15 to 18 mins
- When the cooking time is up, serve immediately.
Oven instructions
- Preheat oven to 425°F / 220°C / Gas mark 7
- Lightly grease the baking sheet then transfer coated potatoes to the baking sheet.
- Bake for 15 mins, turn potatoes to the other side and bake for another 15 mins or until cooked through. Serve with your favorite side dish.
