Air fryer Parmentier potatoes (cubed potatoes)

Equipment

  • Stainless steel pot
  • Colander
  • Air fryer
  • Kitchen tongs
  • Ingredients

    • 2 lbs potatoes (Russet, Irish, Idaho Maris Piper would work)
    • 2 teaspoons Salt divided
    • 1 teaspoon dried Parsley
    • 1 teaspoon dried Oregano
    • ½ teaspoon Rosemary
    • 1 teaspoon garlic powder
    • 2 Tablespoons oil
    • Instructions

      Prepare potatoes Wash and scrub potatoes then cut into cubes.

      1. Parboil

        • Transfer potatoes into pot, add water and 1 teaspoon of salt and bring to boil for 5 to 7 mins
        • Drain the parboiled potatoes.

        Air fryer instructions

        • Transfer drained potatoes into a bowl, add the oil, remaining salt and herbs then toss to coat the potatoes.
        • Transfer coated potatoes to air fryer basket and roast at 400°F / 200°C for 15 to 18 mins
        • When the cooking time is up, serve immediately.

        Oven instructions

        • Preheat oven to 425°F / 220°C / Gas mark 7
        • Lightly grease the baking sheet then transfer coated potatoes to the baking sheet.
        • Bake for 15 mins, turn potatoes to the other side and bake for another 15 mins or until cooked through. Serve with your favorite side dish.
