Zucchini fries are a light, crunchy, and addictive alternative to regular fries. Using the air fryer keeps them crispy without all the oil, while the Parmesan-panko coating gives them a cheesy, savory kick. They’re great on their own or dipped in marinara, ranch, or garlic aioli.

 Ingredients (Serves 2–4)

2 medium zucchinis, cut into fry-sized sticks (about 3″ long and ½” thick)

½ cup panko breadcrumbs

⅓ cup grated Parmesan cheese

1 tsp garlic powder

½ tsp Italian seasoning (optional)

Salt and pepper, to taste

¼ cup all-purpose flour

2 large eggs, beaten

Cooking spray or olive oil mist

Optional for Serving:

Marinara sauce

Ranch dressing

Garlic aioli

Lemon wedges

 Instructions

 Prepare the Coatings

In one shallow bowl, place the flour.

In a second bowl, beat the eggs.

In a third bowl, mix together panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper.

 Coat the Zucchini

Dip each zucchini stick into the flour, shaking off excess.

Then dip into the egg, coating fully.

Finally, press into the panko-Parmesan mixture until well coated. Repeat with all sticks.

 Air Fry

Preheat your air fryer to 400°F (200°C) for 3–5 minutes.

Place zucchini fries in a single layer in the basket (work in batches if needed).

Lightly spray the tops with cooking spray.

Air fry for 8–10 minutes, flipping halfway, until golden and crispy.
