- 2 small garlic cloves, minced
- 1 tablepoons minced shallot
- 2 small red chili peppers, seeded and sliced

- 1/8 cup maple syrup
- 1/4 cup soy sauce
- 1 teaspoon worcestershire sauce
- 1/2 teaspoon sea salt
- 1 teaspoon brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon water
Instructions
- Preheat the air fryer to 385 degrees F, air fryer setting for 5 minutes
- Cut pork belly into 1 inch pieces. Add to a mixing bowl and toss with salt and pepper
- Add pork belly pieces to the air fryer basket and cook for 20 minutes. Every 5 minutes, gently shake the basket to redistribute and evenly cook the pork.
- Meanwhile, prepare spicy ginger sauce. Combine all ingredients in a food processor or blender and purée until smooth and pour into a medium mixing bowl. Whisk together cornstarch and water to make a slurry and add this to the mixing bowl. Whisk well, and pour sauce into a saucepan. Cook over high heat until mixture starts to boil. Once boiling, reduce heat to a simmer for 10 minutes to thicken.
