Air Fryer Potato Cakes

Ingredients:
4 medium potatoes, peeled and grated
1 small onion, grated
1 egg
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
Cooking spray
Instructions:
Prepare the Potato Mixture:
Grate the potatoes and onion. Use a clean kitchen towel or cheesecloth to squeeze out excess moisture from the grated potatoes and onion.
In a large bowl, combine the grated potatoes, grated onion, egg, flour, salt, pepper, garlic powder, and dried parsley. Mix until well combined.
Form the Potato Cakes:
Preheat your air fryer to 200°C (400°F) for about 3 minutes.
Scoop about 1/4 cup of the potato mixture and shape it into a patty. Repeat with the remaining mixture.
Cook the Potato Cakes:
Lightly spray both sides of the potato cakes with cooking spray.
Place the potato cakes in a single layer in the air fryer basket. Avoid overcrowding; you may need to cook them in batches.
Cook at 200°C (400°F) for 10-12 minutes, flipping halfway through, until the potato cakes are golden brown and crispy.
Serve:
Remove the potato cakes from the air fryer and let them cool slightly before serving.
Optional: Serve with sour cream, applesauce, or your favorite dipping sauce.
