    • 1 pound russet potatoes about 2
    • 2 tablespoons avocado oil
    • 1 teaspoon cornstarch
    • 1 teaspoon dried rosemary
    • 1 teaspoon garlic salt
    • ½ teaspoon freshly ground black pepper
    • For serving: flakey salt fresh parsley
    • Instructions

        1. Scrub the potatoes.  Cut the potatoes in half length wise, and then cut into quarters.  Cut each piece into wedges, about ½” thick.
        • Fill a large bowl with warm water, and add the potatoes.  Soak for at least 10 minutes.
      • Drain and dry well.
      • Place in a clean bowl and drizzle with the oil.  Add the cornstarch, rosemary, garlic salt, and pepper.
        • Preheat your air fryer to 350.°F.  Arrange the potatoes in a single layer and cook for 10 minutes, stirring occasionally.
        • Increase the heat to 400°F. Toss and cook for another 15 minutes, continuing to stir occasionally.
        • Sprinkle with salt and serve warm.
