Air Fryer Scotch Eggs

SCOTCH EGGS are the perfect snack, appetizer, or breakfast! They’re delicious served hot or cold, and the easy mustard sauce makes a perfect dip. These are extra easy thanks to the air fryer.

Ever heard of a scotch egg? Oh man, they’re so good and they seriously make a great snack!

A scotch egg is basically a hardboiled egg wrapped in sausage, deep fried, and then served with some sort of mustard.

    Ingredients

    FOR THE SCOTCH EGGS

    • 6 large boiled eggs cooled
    • 1 pound breakfast sausage
    • ¼ cup grated Parmesan
    • 1 teaspoon onion powder

    FOR THE MUSTARD SAUCE

    • ½ cup mayonnaise
    • 3 tablespoons stone ground mustard
    • 1 teaspoon fresh lemon juice
    • 1/2 teaspoon dried dill
    • ¼ teaspoon cracked pepper

      Instructions

      1. Peel the eggs and set aside.
      2. Add the sausage, Parmesan, and onion powder to a mixing bowl and mix well to combine.
      3. Wrap each egg in the sausage mixture to fully enclose the egg.
      4. Place in a single layer in an air fryer basket. Spritz with oil spray.
      5. Air fry at 390 degrees for 12 minutes, flipping halfway through. Check for doneness and continue cooking, if necessary, until the sausage is cooked through.
      6. To make the dip, whisk all of the ingredients together.
      7. Slice eggs in half and serve with the mustard dip.
