A scotch egg is basically a hardboiled egg wrapped in sausage, deep fried, and then served with some sort of mustard.

Ingredients
FOR THE SCOTCH EGGS
- 6 large boiled eggs cooled
- 1 pound breakfast sausage
- ¼ cup grated Parmesan
- 1 teaspoon onion powder
FOR THE MUSTARD SAUCE
- ½ cup mayonnaise
- 3 tablespoons stone ground mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon dried dill
- ¼ teaspoon cracked pepper
Instructions
- Peel the eggs and set aside.
- Add the sausage, Parmesan, and onion powder to a mixing bowl and mix well to combine.
- Wrap each egg in the sausage mixture to fully enclose the egg.
- Place in a single layer in an air fryer basket. Spritz with oil spray.
- Air fry at 390 degrees for 12 minutes, flipping halfway through. Check for doneness and continue cooking, if necessary, until the sausage is cooked through.
- To make the dip, whisk all of the ingredients together.
- Slice eggs in half and serve with the mustard dip.
