Air Fryer Spanakopita Bites are a great and easy appetizer, made in minutes; you will soon find yourself making these, over and over again. For there is nothing as good as a quick bite or easy appetizer–all made in the Air Fryer.

This is one of the easiest recipes that I have made in the air fryer. Growing up, I was fortunate to have many Greek friends, and Spanakopita was usually served at many get-togethers. Today I made my own version, which took me about 20 minutes from start to finish. This is a great and easy recipe, Air Fryer Easy Spanakopita Bites.

Everyone loves Spanakopita. It is one of the most recognized Greek foods. It is usually made with homemade phyllo dough, and the entire process takes hours to prepare.

Spanakopita is usually referred to as Greek Spinach Pie. It has a mix of spinach, feta cheese, and Parmesan cheese. Today, I prepared the same flavors, but one-tenth of the time.

How To Store The Leftovers
If you have any leftover Air Fryer Spanakopita Bites, let them cool to room temperature, and then place a piece of saran wrap over the spanakopita. Place them into the refrigerator. They will last about a day or two.

To reheat, either place them in the microwave until warmed through or place them back into the air fryer for 2 to 3 minutes at 400 degrees F, air fryer setting.

What do you eat with spanakopita?
I love to serve these as either a great big batch of Air Fryer Appetizers or with an extensive Greek Salad. But this is a great snack as well.

    • 10 ounces fresh raw baby spinach
    • 2 tablespoons water
    • 1/4 cup whole fat ricotta cheese
    • 1/4 cup feta cheese, crumbled
    • 2 tablespoons parmesan cheese, grated
    • 1 large egg white
    • 1 teaspoon dried oregano
    • 1 teaspoon lemon zest (1/2 medium lemon)
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/8 teaspoon cayenne pepper
    • 1 package frozen phyllo shells
    • 1 tablespoon olive oil

      Instructions

      1. In a large heavy-bottomed saucepan, combine spinach and water. Cook until spinach is wilted, often stirring – about five minutes.

      2. Drain and cool for at least ten minutes, pressing spinach into a paper towel to blot moisture.

      3. Following the manufacturer’s instructions, preheat the air fryer to 375 degrees F, air fryer setting.

      4. Spray air fryer basket with vegetable cooking spray.

      5. In a large bowl, combine ricotta cheese, feta cheese, parmesan cheese, egg white, oregano, lemon zest, salt, black pepper, and cayenne pepper.

      6. Add spinach and mix well to ensure all ingredients are fully incorporated.

      7. Spoon the spinach mixture into each of the phyllo shells until all have been filled.

      8. Add the filled phyllo shells into the air fryer and air fry for about 10 to 12 minutes until they are golden brown.

      9. Plate, serve, and enjoy!
