Ingredients
For the Filling:
1 cup fresh spinach, chopped (or ¾ cup frozen spinach, thawed & squeezed dry)
½ cup ricotta cheese (or feta cheese for a tangier flavor)
¼ cup shredded mozzarella cheese (or parmesan for extra richness)
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon salt
⅛ teaspoon black pepper
¼ teaspoon red pepper flakes (optional, for a little heat)
For the Pastry:
1 sheet puff pastry, thawed (or use crescent roll dough for a flakier texture)
1 egg, beaten (for egg wash)
1 teaspoon sesame seeds or everything bagel seasoning (optional, for extra crunch and flavor)
Instructions
Prepare the Filling
In a mixing bowl, combine chopped spinach, ricotta (or feta), mozzarella, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
Mix well until all ingredients are evenly combined. Set aside.
Prepare the Pastry
Roll out the puff pastry on a lightly floured surface.
Cut it into 6 equal squares (or circles if you prefer a hand-pie shape).
Place a spoonful of the spinach mixture in the center of each piece.
Fold the pastry into a triangle or half-moon shape, pressing the edges together.
Use a fork to crimp the edges to ensure they are sealed properly.
Brush & Season
Brush the top of each pastry with beaten egg for a golden, glossy finish.
Sprinkle with sesame seeds or everything bagel seasoning if desired.
Air Fry the Pastries
Preheat the air fryer to 375°F (190°C) for 2-3 minutes.
Arrange the pastries in a single layer in the air fryer basket (do not overcrowd).
Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serve & Enjoy
Let the pastries cool for a few minutes before serving.
Pair them with tzatziki, marinara sauce, garlic yogurt dip, or a honey drizzle for a sweet-savory twist!
Tips & Tricks
Use Frozen Spinach Properly – If using frozen spinach, thaw it completely and squeeze out as much liquid as possible to prevent a soggy filling.
Make Ahead Option – Assemble the pastries in advance and store them in the fridge (uncooked) for up to 24 hours before air frying.
Dough Alternatives – Try using phyllo dough for a flakier texture or crescent roll dough for a softer, buttery bite.
Add More Flavor – Mix in chopped sun-dried tomatoes, caramelized onions, or crumbled cooked sausage for extra taste.
Storage & Reheating – Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 2-3 minutes to restore crispiness.
