Prep Time: 10 minutes
Cook Time: 8–10 minutes
Temperature: 375°F (190°C)
Servings: 2 large quesadillas (cut into 4 wedges each)
Ingredients:
For the Filling:
1 cup cooked steak, thinly sliced (leftovers or freshly grilled)
1/2 cup bell peppers, thinly sliced (optional)
1/4 cup onions, thinly sliced
1/2 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
1 cup shredded mozzarella or cheddar cheese (or a blend)
1 tbsp oil or butter (for sautéing veggies, optional)
For Assembly:
2 large flour tortillas (10-inch size)
Cooking spray or light oil for brushing
Instructions:
Prepare the Filling
If using raw veggies, sauté sliced onions and bell peppers in 1 tbsp oil over medium heat for 4–5 minutes until soft. Season with garlic powder, paprika, salt, and pepper.
Add cooked steak slices and stir until warmed through. Set aside.
Assemble Quesadillas
Lay one tortilla flat. On one half, sprinkle a layer of cheese.
Add a layer of the steak-veggie mix, then top with another layer of cheese.
Fold the tortilla in half to make a semi-circle.
Lightly spray or brush both sides with oil to help it crisp up in the air fryer.
Air Fry
Preheat your air fryer to 375°F (190°C) for 3 minutes.
Place quesadillas in the air fryer basket. Don’t overcrowd—cook in batches if needed.
Air fry for 4–5 minutes, then flip and cook another 3–4 minutes, or until golden and crispy.
Slice & Serve
Let them rest for a minute, then slice into wedges.
Serve hot with your favorite dips!
Tips & Tricks:
Pre-cooked steak (leftover ribeye, skirt, or sirloin) saves time and adds flavor.
Use toothpicks to secure the quesadilla edges if they try to open in the air fryer.
Cheese first and last helps seal everything inside.
Use pepper jack cheese for a spicier kick.
Don’t overload the filling—less is more for even cooking.
Serving Suggestions:
Serve with sour cream, salsa, or guacamole.
Add a side of Mexican rice or corn salad.
Great with lime wedges and pickled jalapeños on the side.
