Air Fryer Stuffed Mushrooms with Spinach

Description

This tasty spinach stuffed portobello mushroom, made in the air fryer, is a quick and flavorful dinner you can whip up in just 15 minutes!

Ingredients

  1. 12 ounces baby mushroomsstem removed
  2. 1 teaspoon olive oil
  3. 2 teaspoons minced garlic
  4. 3 cups fresh spinach
  5. 4 ounces cream cheeseroom temperature
  6. 1/4 cup grated parmesan cheese
  7. 1/4 cup shredded mozzarella cheese

Instructions

  1. Start by using a paper towel and cleaning your mushrooms. Then remove the stem. Add the olive oil, minced garlic, and diced stem in a small skillet. Saute for a couple of minutes until the mushrooms are softened.
  2. Then fold in the spinach, mix well, add the cream cheese and the grated Parmesan cheese, mix well.
  3. Add the filling to the mushroom caps, filling about 3/4 of the way. Place them into the air fryer, and set the temperature to 350 degrees F, air fryer setting and cook for 5 to 8 minutes, or until the mushrooms are cooked.
  4. You can sprinkle some shredded mozzarella cheese at the last minute on top.
