Ingredients:
For the Peppers:
4 bell peppers (any color, halved & deseeded)
1 tbsp olive oil
For the Filling:
½ lb ground beef, turkey, or chicken
1 cup cooked rice (white, brown, or cauliflower rice)
½ cup diced tomatoes (canned or fresh)
½ cup black beans or corn (optional)
½ small onion, finely chopped
1 clove garlic, minced
½ tsp cumin
½ tsp paprika
½ tsp dried oregano
½ tsp salt
¼ tsp black pepper
½ cup shredded cheese (cheddar, mozzarella, or a blend)
For Topping:
Extra cheese for melting
Fresh chopped parsley or cilantro
Instructions:
Prepare the Peppers
Cut the bell peppers in half, remove seeds, and brush with olive oil.
Preheat the air fryer to 360°F (180°C) for 3 minutes.
Cook the Filling
In a pan over medium heat, cook ground meat until browned (4-5 minutes).
Add onion and garlic, sauté for 1-2 minutes until soft.
Stir in diced tomatoes, black beans (if using), corn, rice, and seasonings. Cook for another 2 minutes.
Remove from heat and mix in ½ cup shredded cheese.
Stuff the Peppers
Fill each pepper half with the mixture and top with extra cheese.
Place the stuffed peppers in the air fryer basket in a single layer.
Air Fry
Air fry at 360°F (180°C) for 10-12 minutes, until peppers are tender and cheese is melted.
