 Ingredients:

1 cup cooked rice (white, brown, or cauliflower rice)

½ cup diced tomatoes (canned or fresh)

½ cup black beans or corn (optional)

½ small onion, finely chopped

1 clove garlic, minced

½ tsp cumin

½ tsp paprika

½ tsp dried oregano

½ tsp salt

¼ tsp black pepper

½ cup shredded cheese (cheddar, mozzarella, or a blend)

For Topping:

Extra cheese for melting

Fresh chopped parsley or cilantro

 Instructions:

 Prepare the Peppers
