Ingredients (Serves 2-4)
For the Potatoes:
2 large russet potatoes (or sweet potatoes)
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
For the Filling:
2 tbsp butter
¼ cup sour cream (or Greek yogurt for a lighter option)
½ cup shredded cheddar cheese
2 tbsp milk (for extra creaminess)
2 tbsp chopped green onions or chives
2 tbsp cooked bacon bits (optional)
½ tsp garlic powder
For Topping (Optional):
Extra shredded cheese
Chopped parsley
A dollop of sour cream
Instructions
Air Fry the Potatoes
Wash and dry the russet potatoes. Pierce each one with a fork a few times to allow steam to escape.
Rub them with olive oil, then sprinkle with salt and black pepper.
Preheat the air fryer to 400°F (200°C) for 3 minutes.
Place potatoes in the air fryer basket and cook at 400°F for 35-40 minutes, flipping halfway through.
Check for doneness by inserting a knife; it should slide in easily.
Prepare the Filling
Once the potatoes are done, carefully cut them in half lengthwise.
Scoop out the insides into a bowl, leaving about ¼ inch of potato flesh in the skin to keep them sturdy.
Add butter, sour cream, cheese, milk, garlic powder, bacon bits, and green onions to the scooped-out potato.
Mash everything together until smooth and creamy. Adjust seasoning if needed.
Stuff & Air Fry Again
Spoon the mixture back into the potato skins, dividing it evenly.
Sprinkle extra cheese on top if desired.
Return to the air fryer at 375°F (190°C) for 5-7 minutes, until the cheese is melted and bubbly.
Serve & Enjoy!
Remove from the air fryer and garnish with chopped parsley or more sour cream.
