Ingredients (Makes 6 wraps)
For the Beef Filling:
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 lb (450g) ground beef
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp oregano
Salt and pepper to taste
2 tbsp tomato paste (or 1/4 cup salsa)
1/4 cup water
Optional: 1/3 cup corn kernels, 1/3 cup black beans, or diced bell peppers
For the Wraps:
6 medium flour tortillas
1–1½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
Optional: sour cream, guacamole, shredded lettuce, jalapeños
Instructions
Cook the Beef Filling
Heat olive oil in a skillet over medium heat.
Add diced onion and sauté for 3–4 minutes until softened.
Stir in garlic, then add ground beef. Cook until browned, about 5–6 minutes. Drain excess fat if needed.
Add chili powder, paprika, cumin, oregano, salt, and pepper. Mix well.
Stir in tomato paste and water (and any optional ingredients like corn or peppers).
Let simmer for 3–4 minutes until thickened. Set aside to cool slightly.
Assemble the Wraps
Lay out tortillas on a flat surface.
Spoon 2–3 tablespoons of the beef mixture in the center of each tortilla.
Top with shredded cheese and any optional fillings (lettuce, sour cream, jalapeños, etc. — but avoid overstuffing).
Fold tightly like a burrito (fold in the sides, then roll up from the bottom).
Preheat the Air Fryer
Temperature: 370°F (188°C)
Preheat Time: 3 minutes
Cook the Wraps
Lightly spray or brush the wraps with oil (optional, for extra crispiness).
Place 2–3 wraps in the air fryer basket seam side down (don’t overcrowd).
Air Fry at 370°F (188°C) for 7–8 minutes, flipping halfway until golden brown and crispy.
Repeat with remaining wraps.
