Air-fryer Tuna and Potato Fritters With Mayo

Air-fryer Tuna and Potato Fritters With Mayo: Air fryer tuna fritters are so easy to make! The tuna fritters come out crispy and golden brown after cooked in the air fryer. They are ready in less than 15 minutes and require no preheating.

Ingredients:

  1. 425 grams, well-drained John West light tuna (475g) well-drained
  2. 475 grams of basic  potato mash
  3. One egg, free-range, beaten
  4. 1 and a half cups panko crumbs
  5. 5ml cooking spray with extra virgin olive oil
  6. 300g of mixed leafy salad mix with carrots
  7. one-third bottle 400 g squeeze of authentic mayonnaise
Directions:

Step 1: To a large bowl, add tuna, mashed potato, egg and panko. Season well and stir until thoroughly combined, adding more panko if necessary to ensure that mixture isn’t too sticky.

Step 2: Shape mixture into 12 evenly sized fritters. Spray a large air-fryer basket with oil. Place half of the fritters in the basket. Cook at 200°C for 15 minutes, turning fritters and spraying with oil halfway through, or until golden. Transfer to a paper-towel-lined plate. Repeat with remaining oil and fritters.

Step 3: Divide fritters and salad mix amongst plates. Serve with mayonnaise.

Recipe advice: Lacking an air fryer? As soon as the oven reaches 200°C or 180°C with fan assistance, line a large baking pan with baking paper. Arrange the fritters on the tray and mist with oil. Bake for 20 minutes, or until browned, flipping and misting the tops with oil halfway through.
