Air fryer veggies and sausage
A tasty, filling, and fast supper that just takes a few minutes to prepare is Air Fryer Veggies with Sausage! Since I’m cooking for me, I have a little air fryer that holds either 2 1/2 or 3 quarts.
Ingredients:
8 oz smoked sausage, sliced (kielbasa, andouille, or turkey sausage)
2 cups baby potatoes, diced
1 cup baby carrots, halved lengthwise
1 cup broccoli florets
1 tbsp olive oil
½ tsp garlic powder
½ tsp smoked paprika
½ tsp dried oregano
Salt & black pepper, to taste
Optional: ¼ tsp crushed red pepper flakes for heat
Instructions:
Preheat Air Fryer to 375°F (190°C).
Season the potatoes & carrots: Toss them with olive oil, garlic powder, smoked paprika, oregano, salt, and pepper.
Cook potatoes & carrots first: Spread them in the air fryer basket and cook for 10 minutes, shaking halfway.
Add sausage & broccoli: Toss in the sliced sausage and broccoli, and cook for another 6–8 minutes, shaking the basket halfway through.
Serve immediately with a dipping sauce like honey mustard, ranch, or garlic aioli!
Tips & Variations:
Want crispier potatoes? Soak them in cold water for 15–20 minutes, then pat dry before seasoning.
Swap veggies: Use bell peppers, zucchini, asparagus, or Brussels sprouts.
Cheesy twist: Sprinkle Parmesan or shredded cheddar in the last 2 minutes of cooking.
Add a sauce: Drizzle with balsamic glaze, hot honey, or garlic butter for extra flavor!
