Air fryer veggies and sausage
Since I’m cooking for me, I have a little air fryer that holds either 2 1/2 or 3 quarts.
ingredients
- I added six or seven baby carrots
- and three small potatoes,
- chopped into bite-sized chunks ,to use up little amounts of leftover produce
instructions
- I mixed those with a tiny bit of leftover taco spice, pepper, and olive oil.
- I placed those into my prepared air fryer and set it to roast (my air fryer does not have an actual air fry setting, so I believe that to be 380°F/190C).
- I let those cook while I sliced the red and green bell peppers into quarters apiece and tossed them with a little oil, pepper, and curry powder.
- I shook the basket once the potatoes and carrots had cooked for about five minutes, then added the peppers and cooked for an additional eight minutes, shaking once.
- After that, I added the precooked sausage slices, gave everything a good shake and cooked for a further 6 to 8 minutes while checking the potatoes and carrots for doneness.
- Even though I finished it all, this made a substantial meal for me. If I make something similar again, I’ll skip the potato and the carrot or two.
