Almondine Tartlets

Ingredients:

– For the sweet dough:
– 100 g of soft butter
– 100 grams of sugar
– 1 œuf
– 200 g of flour
– For the almond cream:
– 125 g of soft butter
– 125 grams of sugar
– 2 eggs
– 125 grams of almond powder
– 1 tablespoon of rum
– 50 grams of sliced almonds

Preparation:

1. Prepare the sugar dough:
-Mix soft butter and sugar. Add the egg and mix.
– Then add the flour and mix until the mixture is homogenous. Stop as soon as it’s homogenous to not overwork the dough.
– Wrap the dough in a food film and store in the refrigerator for 30 minutes.
2. Prepare the almond cream and then assemble:
– In a salad bowl, mix soft butter and sugar with a spatula. Add eggs, almond powder and rum. Mix until you get a homogenous cream.
– Preheat your oven to 180 ° C.
– Spread the sweet dough using a pastry roll on a floured worktop.
– Fill 4 tartlet molds of 12 cm diameter with the sweet dough and pour almond cream into each tartlet.
– Sprinkle on shredded almond tarts.
– Cook the almond tartlets for about 20 minutes at 180°C.
– Let them cool before they mold.
