American White Sandwich Bread (Soft, Fluffy & Bakery-Style)
Nothing beats the smell of fresh bread baking in your kitchen. This classic American white sandwich bread is soft, light, and perfectly fluffy with a tender crust and fine crumb. It slices beautifully for toast, sandwiches, grilled cheese, or French toast. Unlike store-bought loaves, this homemade version contains simple, wholesome ingredients and no preservatives or additives. Once you try it, you’ll never want packaged bread again.
Ingredients
4 cups (500 g) bread flour (all-purpose works too)
1 cup warm water (110°F / 43°C)
½ cup warm milk
2 tablespoons sugar
2¼ teaspoons (1 packet) active dry yeast
3 tablespoons unsalted butter, melted and slightly cooled
1½ teaspoons salt
Instructions
Step 1 – Activate the Yeast
In a large mixing bowl, combine warm water, warm milk, sugar, and yeast. Stir gently and let sit for 5–10 minutes. The mixture should become foamy and bubbly, which means the yeast is active. If nothing happens, your yeast may be expired or the liquid too hot or cold.
Step 2 – Mix the Dough
Add the melted butter and salt to the yeast mixture. Gradually add the flour, one cup at a time, mixing until a soft dough forms. The dough should pull away from the sides but still feel slightly soft.
Step 3 – Knead
Turn the dough onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic. If using a stand mixer with a dough hook, knead for about 5–7 minutes. Proper kneading develops gluten, giving the bread structure and fluffiness.
Step 4 – First Rise
Place the dough in a lightly greased bowl and turn to coat. Cover with a towel and let rise in a warm place for 1–1½ hours, or until doubled in size.
Step 5 – Shape
Punch down the dough to release air. Roll it into a rectangle, then tightly roll into a log. Tuck the ends under and place into a greased 9×5-inch loaf pan.
Step 6 – Second Rise
Cover and let rise again for 45–60 minutes, until the dough rises slightly above the rim.
Step 7 – Bake
Bake at 350°F (177°C) for 30–35 minutes until golden brown. The loaf should sound hollow when tapped.
Step 8 – Cool
Brush with butter for a soft crust. Cool completely before slicing.
