Apple Cinnamon Loaf Cake
Ingredients
For the Apples:
- 2–3 medium apples, peeled and diced
- 50 g (¼ cup) light brown sugar
- 1 tsp ground cinnamon
For the Cake Batter:
- 100 g (½ cup) light brown sugar
- 45 g (3 tbsp) butter, melted and cooled
- 40 g (¼ cup) sunflower or vegetable oil
- 80 ml (⅓ cup) milk, room temperature
- 2 eggs, room temperature
- ½ tsp vanilla extract
- 210 g (1¾ cups) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
Cake Pan Size:
- 22 x 13 x 7 cm (9 x 5 inches) loaf pan
Instructions
Prepare the Apples:
- In a medium bowl, toss the diced apples with 50 g of light brown sugar and 1 tsp of ground cinnamon.
- Let the mixture sit for 15 minutes to allow the apples to release their juices and infuse with cinnamon and sugar.
Prepare the Cake Batter:
- In a large bowl, whisk together 100 g light brown sugar, melted butter, and sunflower oil until smooth and well combined.
- Add 80 ml of milk, 2 room temperature eggs, and ½ tsp vanilla extract. Mix well to combine.
- In a separate bowl, sift together 210 g all-purpose flour, 1 tsp baking powder, ½ tsp baking soda, 1 tsp ground cinnamon, and ¼ tsp salt.
- Gradually fold the dry ingredients into the wet mixture, stirring gently until you have a smooth batter.
Assemble the Cake:
- Preheat your oven to 350°F (180°C).
- Grease your loaf pan or line it with parchment paper.
- Pour half of the batter into the prepared pan and spread it evenly across the bottom.
- Scatter ⅔ of the apple mixture (along with some of the apple juice) evenly over the batter.
- Pour the remaining batter over the apples and spread it out to cover them.
- Top with the remaining apples and drizzle any leftover juices from the apples over the top.
- Use a knife or skewer to gently swirl the batter and apples together, making sure to reach the bottom of the pan.
Bake the Cake:
- Place the cake pan in the preheated oven and bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once the cake has cooled, slice it and serve with a hot cup of tea or coffee. The combination of warm cinnamon and soft apple chunks in every bite makes this cake simply irresistible!
