Apple Raisin Cake with Caramelized Apples
Ingredients (Serves 8)
- For the Cake:
- 1 large apple
- 1 tablespoon lemon juice
- 1 tablespoon butter (20g)
- 1 tablespoon sugar (20g)
- 2 eggs
- 6 tablespoons sugar (120g)
- 8g vanilla sugar
- 8 tablespoons oil (80ml)
- 10 tablespoons milk (100ml)
- 16g baking powder
- 230g flour
- 50g raisins
- Optional:
- Sugar icing
Directions
- Preheat the Oven:
- Preheat your oven to 160-170°C (320-340°F).
- Prepare the Apple:
- Peel and core the apple, then chop it into small pieces.
- Toss the apple pieces with 1 tablespoon of lemon juice to prevent browning.
- Prepare the Baking Mold:
- Grease a 26 cm (10-inch) diameter mold with butter.
- Sprinkle with flour to coat evenly.
- Cook the Apples:
- In a small pan, melt 1 tablespoon of butter over medium heat.
- Add 1 tablespoon of sugar and the apple pieces.
- Cook, stirring occasionally, until the apples are soft and caramelized (about 5 minutes). Set aside to cool.
- Mix the Batter:
- In a large mixing bowl, beat the 2 eggs with 6 tablespoons of sugar and 8g of vanilla sugar until light and fluffy.
- Gradually add the oil, continuing to beat.
- Add the milk and mix well.
- Sift in the flour and baking powder, and gently fold until combined.
- Add Apples and Raisins:
- Gently fold the caramelized apples and raisins into the batter.
- Preheat the Oven:
- Bake:
- Pour the batter into the prepared mold and smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Bake:
- Cool and Serve:
- Let the cake cool in the mold for about 10 minutes.
- Transfer to a wire rack to cool completely.
- Optionally, drizzle with sugar icing before serving.
