Ingredients:

2 medium zucchinis, grated

1 small onion, finely chopped

1 cup self-raising flour

1 cup grated cheese (cheddar or a cheese of your choice)

4 large eggs

1/4 cup  olive oil)

Salt and pepper, to taste

1/2 tsp dried mixed herbs (optional)

Instructions:

Preheat your oven

to 180°C (350°F) and grease or line a 20x30cm baking dish with baking paper.

Prepare the zucchini:

Grate the zucchinis and squeeze out the excess moisture using a clean tea towel or your hands. This helps prevent the slice from becoming soggy.

Combine the dry ingredients:

In a large mixing bowl, sift the self-raising flour, then add the grated zucchini, chopped onion, grated cheese. Stir to combine.

Add the wet ingredients:

Crack the eggs into a separate bowl and beat them lightly. Add the oil to the eggs and mix. Pour this mixture into the bowl with the dry ingredients.

Season:

Add salt, pepper, and any optional dried herbs to taste. Stir everything together until well combined. The mixture should be thick but slightly runny.

Bake:

Pour the mixture into the prepared baking dish and spread it out evenly. Place it in the oven and bake for 30-40 minutes, or until the slice is golden brown on top and a skewer comes out clean when inserted into the center.

Cool and Serve:

Once baked, allow the slice to cool for a few minutes before slicing into squares or slices. It can be served warm or cold.

Tips:

If you want to make it even healthier, you can replace the cheese with a lower-fat variety or use a combination of vegetables.

For extra flavor, you can add some garlic or chili flakes.

This dish can be stored in the fridge for a few days, making it great for meal prep.
