1 ripe avocado
1 large egg
Salt & black pepper to taste
Optional (but recommended)
Pinch chili flakes
Everything bagel seasoning
Paprika
Fresh herbs
Squeeze of lemon
👩🍳 Option 1: Baked Avocado Egg Boats
1️⃣ Preheat
Preheat oven to 400°F (200°C).
2️⃣ Prep the Avocado
Slice avocado in half and remove pit.
Scoop out a little extra flesh to make room for the egg.
3️⃣ Add Egg
Place halves in a small baking dish to keep steady.
Crack one egg into each half (or whisk egg first and spoon in for easier filling).
4️⃣ Bake
Bake for 12–15 minutes (until whites are set).
Season and serve warm.
👩🍳 Option 2: Avocado Egg Skillet Mash (Creamy & Fast)
1️⃣ Mash avocado lightly in a bowl.
2️⃣ Cook egg sunny-side or over-easy in a skillet.
3️⃣ Place egg on top of mashed avocado.
